Dehydrated Flank Steak Jerkey

Dehydrated Flank Steak Jerkey

A friend let me borrow her dehydrator a few weeks ago and I’ve been going HAM ever since!  There are so many fun things you can do with it, from making homemade dog treats, dehydrating fruit for a healthy trail mix, intensifying marinades, or creating the coveted black garlic (lookin at you, Joshua Weissman!).

Your imagination can really run wild with a dehydrator.  The best part: you can recreate some of your favorite recipes while knowing exactly what’s in them!

Ingredients:  (Yield: ≈1 pound)

  • 1 lb flank steak (any lean cut, i.e., skirt steak, hangar steak, etc. will work)
  • 1/2 bunch of green onions
  • 1-2 cloves of garlic
  • 1/4 cup granulated sugar
  • 1/2 cup of tamari (gluten-free) soy sauce
  • Dried thyme, to taste
  • Red pepper flakes, to taste

Directions:

  1. Thinly slice steak, slightly >1/8in thick
  2. Add onions, garlic, sugar, tamari, & thyme to a food processor; blend until smooth
  3. Add steak to a container in batches, pouring marinade over each batch to ensure even coverage
  4. Sprinkle red pepper flakes over each batch to desired level of spice; shake to incorporate
  5. Repeat steps 3-4 until all steak has been added
  6. Marinate for 6-24 hours
  7. Lay steak out on trays and place in dehydrator
  8. Set dehydrator to 135°F for ≈8 hours or until jerky cracks, but does NOT snap when bent
